Sharing Secrets.

I'm not supposed to be telling you this... 
My Momma says it is a "secret recipe" but I just can't help it!

So here it is, my Momma's Baked Potato Soup recipe.
 It is just too good NOT to share.
But shhhh- don't tell her I told you!

- Ingredients -
- 4 cups diced potato (peeled)
- 1 cup diced celery
- 1 cup diced carrot
- 1 cup onion (yellow or red, your choice)
- 1/2 tsp. salt
- 2 cups diced potato (with skins ON)
- 4 tbs. butter
- 3 tbs. flour
- 1 tsp. salt
- pepper to taste
- 2 tsp. dried parsley
- 4 cups milk 
- 2 cups cheddar or colby jack cheese (I *heart* cheese so I mix both)
- 1/4 cup scallions
- 1/4 cup of bacon
- More cheese, scallions & bacon for garnish  (as shown up close & personal below - YUM!)





- Steps -
- Chop all veggies & potatoes
- Combine peeled potatoes, celery, carrot, onion & a bit of salt in one large stock pot. 
- Fill pot with water so that veggies are just covered. 
- Boil for approx. 10-20 minutes until veggies are tender.
- Drain. (it is ok if you leave a little bit of water... its hard to get it all out & not loose your veggies!)


- In a separate small pot boil potatoes with skins on for approx. 10-15 minutes until softened.


- In yet another pot add butter, flour, salt, pepper & parsley- whisk together until a paste is made. 
Add milk & heat over medium heat until "rue" appears thickened, whisking occasionally (approx. 10-15min)


- Add potatoes with skins on to large pot with other veggies after draining. 
- Hand mash veggies & potatoes to desired chunkiness. (my favorite part!)
- Pour "rue" mixture over veggies & potatoes - stir.
- Add cheese, bacon & scallions - stir.
- Turndown entire pot to low & allow to thicken for approx. 10 min.
- Salt & Pepper to taste


- Ladle into bowls.
- Garnish with more cheese, scallions & bacon. 
- Enjoy!
Yields 4-6 servings
